
So I have started to harvest things out of the garden. It always brings such Joy to me when I have been successful in gardening. I have gotten Zucchini's, yellow squash, basil, cilantro, beans, lettuce, blueberries, few raspberries and one tomato so far.
Last week with my Basil i made homemade Pesto. I Love this stuff so I thought I would share the recipe.
Auntie Cassy's Pesto
2 cups of fresh basil leaves
1/3 cup fresh Parmesan cheese, grated (I just use the stuff that's already grated)
4 cloves of garlic, peeled
1/2 cup pine nuts (these are expensive but worth it, if you don't want to spend a small fortune you can use walnuts. My friend Chelsea told me why they are so expensive, its a really hard time consuming process to harvest pine nuts.)
1/2 cup olive oil
1/2 tsp. pepper
1/2 tsp. salt
Rinse basil leaves in cold water. Remove excess water. Place basil leaves in food processor or blender and chop well. Add remaining ingredients and puree. Adjust salt and pepper to taste. Keeps in refrigerator one week. In freezer in sealed container for a few months.
I then take my freshly made pesto and spread a layer on 1/2 slices of Bruschetta Bread. Then layer with tomato slice, salt and pepper then layer with Parmesan or Havarti Cheese. Place these on a cookie sheet and broil until the cheese is melted. I can eat this all summer long. I hope I planted enough Basil.
So this isn't a picture of it because I was to busy eating the food to remember to take an actual picture. But it kind of gives you an idea except with out the cheese and it doesn't have pesto and the tomato's are all chopped up. So maybe this wasn't the best picture to use. This post is making me hungry.

You should start growing pine nuts Marta. You have such a green thumb!
Hi Marta, I am so happy for you that you garden are doing well. My is doing well too I already got so many vegetables that I don’t need to buy anymore.
